		<description><![CDATA[Delicious quick cook soup for cold winter evenings (and headcolds)]]></description>
			<content:encoded><![CDATA[<p>Here&#8217;s a cold cure, that doesn&#8217;t contain garlic. This is a delicious soup that brings back lovely memories of weekends away with wonderful people. Recipe is for a single serve for a family of 4, next time I cook it I will double the ingredients.</p>
<p>2 tbs Olive Oil<br />
1 large onion<br />
2 celery sticks<br />
3 vine ripened tomatoes<br />
1.5l chicken stock (is use Massel brand &#8220;chicken&#8221; - vegan - stock)<br />
1/2 cup Ditalini - or any other small soup pasta<br />
2 tbs chopped parsley</p>
<p>Cook off onion &amp; celery in olive oil<br />
Skin and deseed tomatoes (this step is worth it, I cut a cross at the non stalk end and blanch in boiling water for 1 min. to loosen the skins<br />
Add stock &amp; tomatoes to celery &amp; onions and bring to the boi<br />
Add pasta, cook til al dente<br />
Serve with pepper &amp; salt and parsley</p>
<p>We love ours with warmed crusty olive sourdough bread and butter. You could always add some dried chili to clear out the sinuses</p>

I find it hard to describe how much joy and physical and mental benefit I found from attending Ana&#8217;s classes.
